The gap is early opening plus a fast, short menu: nobody with table service opens before 7am, and the two largest rooms are slowest at peak. Salt and Ash opens 6.30am with a kitchen designed to plate brunch in under twelve minutes. On price, $5.20 for a flat white sits between Harvest and Co and the rest, which the quality of the roast supports and the margin table in section 3 depends on.

6. Marketing

Launch is a two week soft opening for locals: free coffee cards handed through the surf clubs, the primary school and the two gyms, aimed at building a weekday regular base before the first summer. Service runs one repeating loop, and every role is stationed on one step of it. Orders are taken at the counter before 8am and at the table after, food leaves the pass in order time, and the close is a 40 minute checklist so the room opens clean at 6.30 the next morning.

Mara Ellison has spent 11 years in hospitality: five on the floor and behind machines in Melbourne, two running events catering, and four managing The Wharf Kitchen, a 60 seat cafe in Geelong, where she ran a team of 14, the roster and the weekly orders, and took the room from 3.9 to 4.6 stars. Who reads which page

A lender reads the executive summary and the financials, in that order, and returns to the market only if the numbers look optimistic. A grant assessor reads the market and the risks. A partner reads operations and the owner section, because that is where the workload sits. Writing for all three at once is what makes plans bloat, so this one keeps the jobs apart.

The numbers a lender checks

Revenue per seat: $612,000 over 40 seats is $15,300 a year. Wages against revenue: 43 percent, above the 30 to 35 percent an operator would like, which is stated rather than hidden because the casual roster flexes with the season. Questions people ask

How long should a business plan be?

Ten to fifteen pages for a lender, one page for yourself. This one runs to nine with the cover and contents, and every page carries a number or a decision. Past twenty pages the market section has usually turned into an essay. The adapt notes below show the one page cut.

What financials does a business plan need?
